Mandheling is a trade name, used for Arabica coffee from northern Sumatra.
It was derived from the name of the Mandheling people, who produce coffee in the Tapanuli region of Sumatra. Mandheling coffee comes from Northern Sumatra, as well as Ache.
Indonesia’s coffees have long been prized for a particular cup profile, resulting from the country’s unique processing method, called wet hulled, or giling basah, in the Bahasa language.
Giling basah involves hulling the parchment at roughly 50 percent moisture content, versus 10 to 12 percent of moisture, which is common worldwide. The parchment is then hulled, bagged and sent to rest, this is also unique to Indonesia. Elsewhere, hulling typically takes place just before the coffee is shipped to the port.
The Grade 1 Sumatra coffees as Triple-Picked (TP), referring to the number of times the coffee is hand-sorted for defects. This extra quality control measure further contributes to a consistent cup that is comprised of cherries picked at optimum ripeness.

Brewing Tips

The popular ratios for espresso is 1:2 (1 gram of coffee to every 2 grams of water).
Coffee Extraction Time Temp
18.5g 37g 30" 92°C
For filter is 1:17 (1 gram of coffee to every 17 grams of water).
Coffee 15g 30g 60g
Water 250ml 500ml 1000ml
There is no such thing as a "Golden" ratio, but well-balanced cups of coffee are consistently brewed around a certain ratio. This is a good place to start, if you like stronger taste, you might use a 1:14 ratio. If you like a normal taste, you might pour 1:16 or 1:17. You can slightly turning your settings to match your taste and brewing methods. For other brewing methods, check out our Brewing Guides and Tips.
